水煮魚的做法:
配料:豆芽,或自己喜歡的蔬菜
調料:姜(壹大塊、拍松切片)、蒜(壹頭,略拍即可,不必切)、蔥
適量
豆瓣(或剁椒)、花椒、幹紅辣椒、辣椒粉、
鹽、味精、胡椒粉、料酒、醬油、醋少許、食用油
另需:生粉、料酒、鹽少許,蛋白壹個
做法:
1、將魚殺好洗凈,剁下頭尾,片成魚片,並把剩下的魚排剁成幾
塊。將魚片用少許鹽、料酒、生粉和壹個蛋白抓勻,腌15分鐘。
頭尾及魚排另裝盤,用同樣的方法腌制)
2、燒開壹小鍋水,將豆芽洗凈後,放入開水中燙壹下,撈入大盆
中,按個人口味撒壹點鹽,備用。
3、在幹凈的炒鍋中加平常炒菜三倍的油,油熱後,放入三大匙豆
瓣(或剁炒)爆香,加姜、蒜、蔥、花椒粒、辣椒粉及幹紅辣椒中
小火煸炒。出味後加入頭尾及魚排,轉大火,翻勻,加料酒和醬
油、胡椒粉、白糖適量,繼續翻炒片刻後,加壹些熱水,同時放
鹽和味精調味(要嘗壹下鹹淡)。待水開,保持大火,壹片片將魚
片放入,用筷子撥散,3~5分鐘即可關火。把煮好的魚及全部湯汁
倒入剛才盛豆芽的大盆中。
4、另取壹幹凈鍋,倒入半斤油(具體油量要看準備的容器大小,
以倒入大盆中時,把魚和豆芽全部淹沒為準,可以目測壹下)。待
油熱後,關火先晾壹下。然後加入多多花椒及幹辣椒(看個人的嗜
麻辣程度),用小火慢慢炒出花椒和辣椒的香味。註重火不可太大
,以免炒糊。
5、辣椒顏色快變時,立即關火,把鍋中的油及花椒辣椒壹起倒入
盛魚的大盆中,小心燙!!吃吧!!
